Found in Indonesia, a cat like animal called the civet cat, eats the coffee cherry. Farmers go and pick through their scat, then wash and process the coffee. The civet cat only chooses the ripest cherries to eat. The enzymes change the flavor of the coffee that comes out, producing something very unique and syrupy with a hint of smokiness.
