This coffee from the Finca La Pastora farm in the Tarrazu region of Costa Rica is dried using a special method called the 'honey process.' This involves keeping the bean encased in the part of the coffee cherry that is nicknamed the 'honey' while it is drying, making for a sweet and fruity cup with more body than a traditional washed Costa Rican. The black honey process in particular gives this coffee a heavy body with notes of black cherry, raspberry, and chocolate.
