Most coffee is processed using either a "dry" or "washed" method. This bean however, goes through a specialized process that is in between the two. A "honey process" keeps the coffee cherry around the seed until the fruit dries to a certain color (white, yellow, red or black), which imbues a little extra sweetness and can modify the body strength and acidity.
