Most coffee is processed using either a "dry" or "washed" method. This bean however, goes through a specialized process that is in between the two. A "honey process" keeps the coffee cherry around the seed until the fruit dries to a certain color (white, yellow, red or black), which imbues a little extra sweetness and can modify the body strength and acidity.
Done to a full city light roast, the Finca El Rinconsito Black Honey offers a light body with mellow acidity and the slightest hint of fruitiness. Even the members of our team who usually put milk in their coffee consider it smooth enough to easily drink it black!
