100% white tea buds are plucked only a few days each spring when the tea plants are re-emerging from their winter dormancy. The buds are covered by silvery down, giving the plant a whitish appearance. Once the young buds are plucked, they are air dried. This minimal processing yields a delicate "fresh" leaf, full of antioxidant power and low in caffeine content.
